Breakfast on the go.. Vanilla and Cacao Nib Banana Bread

My job means early starts and I like to make them even earlier by going to the gym or for a run before work. So, breakfast on the go is a must for me!

I love banana bread but traditional versions are laden with sugar and saturated fats; not ideal post workout or for a nourishing snack. Therefore, I came up with a tasty, healthier, high protein alternative.

After a workout, you want ample protein combined with a carbohydrate. A protein rich food made from protein, and a banana is a great choice, since your body quickly turns it into energy. The bananas are brilliant post workout; as a a high-glycemic carbohydrate source the uptake of sugar will replenish your muscles quickly. The protein powder will aid your muscles in recovery and growth.

To make one loaf you will need:

A greased and lined loaf tin,

2 bananas mashed,

2 medium eggs, beaten,

2 scoops of vanilla protein powder (I used nutristrength pea protein),

A handful of cacao nibs,

A teaspoon each of vanilla essence and baking powder,

60g of brown rice flour (or any other flour of choice),

20g of almond flour (I used Sukrin)

Pre heat the oven to 180C and line your baking tin.

Combine all of the ingredients, excluding the cacao nibs, and then add enough water to make a batter.

Pour the mixture in to the tin and sprinkle the cacao nibs on top,

Bake in the oven for around 25 minutes or until golden on top.

To serve, eat plain or smother with almond butter (Pip and Nut is delicious).
