Hot Cross Protein cookies...
It's Easter and you cannot get away from the smell of cinnamon and currants in every supermarket, so this got me thinking.
Your standard cookie or hot cross bun contains , for around 250 calories, 40g of carbohydrates, 14g of sugars and 5g of protein per serving; not the nutritional content I desire from the foods I eat.
So, I put on my thinking hat and these cookies were born. With only 80 calories per serving, 13.3g of carbohydrates, 3.9g of sugars and 4,6g of protein, these are a lot more macro friendly,
Recipe:
To make 9 cookies you will need:
- 100g of buckwheat flour,
- 20g of Xylitol (or any other sugar alternative),
- 20g of pea protein (I used Pulsin),
- 100g of egg white (I used Two Chicks; found in Waitrose and Tesco)
- 50g of raisins or sultanas,
- half a teaspoon each of nutmeg, cinnamon and ginger.
Simply line a baking tray with greaseproof paper and pre-heat your oven to 170C.
Mix all of the ingredients together with enough water to make a slightly runny paste.
Spoon out 9 equal sized blobs of mixture and then spread them in to a circle shape.
Then make the cross shape; simply mix a tablespoon of rice flour (or any other white looking flour) with a little water to make and paste, spread in a cross shape across the cookie.
Pop the cookies in to the oven for around 15-20 minutes or until going golden brown.
And then, most importantly, EAT!!!
