Chocolate and Peanut Protein Pancakes with a peanut sauce...
So today I started the day in a sweet way (something I've been trying to do less as it makes me crave sweet foods ALL day) and boy did it taste good.
As it was a rest day, I wanted to start my day with a low carb, high protein, high fat breakfast that would keep me full until lunchtime without it being the standard 'bro food' option. So, along came this protein packed pancake stack.
Using alternative flours I kept the carbohydrate content low. Coconut flour is gluten free as it finely ground coconut meat, very rich in fibre so will aid digestion and keep you full for longer. It also contains manganese which helps you to absorb different minerals , such as Vitamin C (essential in this cold weather) as well as stabilising blood sugar levels (to stop you reaching for the sweets)! Peanut flour is 50% pure protein and has 1/4 of the carbs of other regular flours plus is packed full of mono-unstaurated fats.
So, now you know some of the nutritional benefits, here is the recipe.
Recipe:
For the Pancakes:
20g of Soya Protein, or protein of choice (I use Pulsin),
50 ml of Milk of choice (I use Alpro Coconut and Almond),
10g of Peanut flour (I used Sukrin),
10g of Cacao Powder (I used Creative Nature Superfoods),
75g of eggwhites (or alternatively you could use one whole egg),
20g of Cocount flour (I used Sukrin),
Coconut oil to fry them in.
Toppings of choice (I went for fruit and cacao nibs)
For the sauce:
10g of Peanut flour
Agave Syrup, Honey or Maple Syrup to taste
To make the pancakes
1. Mix the peanut flour, soya protein and coconut flour together.
2. Add the egg whites and mix togther (It will be very clumpy; don't worry) and then add in the milk (It will still be clumpy).
3. Add in as much water as you need in order to make the mixture resemble that of cake batter.
4. Heat a frying pan on a medium heat with half a teaspoon of coconut oil.
5. Once up to heat, put in a tablespoon of mixture and cook for 3/4 minutes on each side or until flippable.
6. Once you have used half the mixture, add in the cacao powder.
7. Once combined repeat step 5 until all of your mixture is gone.
The sauce:
To make the sauce simply combine two tablespoons of water with the peanut flour and sweetener of choice until it is lump free.
Now plate up, top with allllll the toppings and enjoy!
