Healthy Brownies? Yes, you heard me right!

So, this weekend (like most) I got my bake on.

This weekends conquest came in the form of low fat, low carb, high protein brownies.

I wanted the brownies to be super moist and similar in taste and texture to that of a 'normal', not so healthy, brownie. After browsing the internet and flicking through a multitude of cookbooks (Honestly Healthy, Deliciously Ella and the new and amazing Lean in 15) and then looking at other health food blogs ( Zanna Van Dijks, Lottie Murphy and Naturally Sassy), I decided upon my moisture retaining ingredient.

The ingredient of choice was high protein, high fibre and low fat... It was the black bean!

Alas, my protein black bean brownies were born and here is the recipe:

Recipe:

Ingredients:

400g tin of black beans- drained and washed,

200ml of coconut milk (I used Koko),

100g of coconut flour (I used Sukrin),

50g of Agave Syrup,

3 eggs,

1 scoop of protein of choice (I used She Supps chocolate flavour),

5 tablespoons of Cacao Powder (I used Creative Nature Superfoods)

1. Preheat the oven to 180C and line a 20cm by 20cm baking tray.

2. Simply put all of the ingredients in a blender and blend until well combined.

3. Keep adding water until you have a batter like consistency.

4. Once the mixture is well blended, pour it in to a baking tin and pop it in to the oven for around 40 minutes or until the brownies are fim to touch.

5. Leave the brownies in the baking tin to cool and then cut in to 18 squares.

6. Enjoy and eat! They are particularly nice with almond and coconut butter smothered on top (try Pip and Nut)!
